About the Recipe
This is a great basic mix. It is a lower fat and sugar option to most cookies - with the added benefit of being rapeseed/canoloa oil free (if using a good quality olive oil or oil replacement).

Ingredients
1 cup and 2 TBSP Gluten free Self Raising Flour
1/2 cup white sugar
1 egg
3 tablespoons of olive oil (light taste)
a drop of vanilla essence (queens - real not fake essence)
Preparation
Step 1
Turn oven on to 180 deg
Step 2
Mix all ingredients together in bowl till it forms a soft dough.
Step 3
Option 1:
Take teaspoon amounts and place on to lined baking tray
Option 2:
Add flour to bench and roll dough till around 2-5 millimeters thick. Use cookie cutters to cut out shapes. Place on lined baking tray (using a spatula can help lift the cookie dough of bench to get on to the tray
Step 4
Bake cookies for 10-15 min depending on size. Check after 8. They should be golden brown.
*If the cookies crystalize this means they are over baked or the temperature of the oven needs to be reduced.
