About the Recipe
This is an adaption on the best banana cake I've tired, If you are on the Elimination diet, take out the Cinnamon and Nutmeg

Ingredients
3 large bananas
1 and and 1/2 cups of Soya or rice milk
1 Tablespoon of Lemon Juice
375gm of Gluten free flour
1 TSP Baking Powder
1TSP Baking Soda
1/2 TSP Cinnamon (Optional)
1/2 TSP Nutmeg (Optional
1/2 TSP Salt
170gm Nuttalex (or dairy free butter)
200gm Sugar
100gm Light Brown Sugar
3 Large eggs
A drop of Pure Vanilla Essence (or a 1 teaspoon golden syrup or maple syrup, but is optional)
Preparation
Step One
Turn oven on to 175 deg C
Mash Bananas
Step Two
Mix Soya milk and lemon juice together - leave aside (It will thicken up)
Step Three
Sift flour, Baking Powder, Baking Soda, Cinnamon, Nutmeg and salt together in to a bowl (or beat with a whisk to mix and aerate).
Step Four
Cream butter and sugar till light in colour (by hand or with spatular on Kitchen mixer)
Add mashed banana and then eggs.
Next add a littel flour, then a little of the soya milk mix alternatively until mixed in to a batter.
Step Five
Pour mix into loaf tins or cupcake tins
Step Six
Cook for 25-50 min depending on time and size, - you should be able to put a spear or knife in and it come out clean in the centre when cooked.
Let sit in tin until it releases a little from the edge then turn out on to a wire rack.
