Ingredients

  • 1/2 cup of Tricolour quinoa

  • 1 cup of Water

  • Oil (to fry leek)

  • 1/2 a small Leek

  • 1/2 cup Green Beans (Frozen)

  • 1/4 cup of Green Baby Peas (Fozen)

  • 1 Spring Onion

  • 1 Celery Stalk

  • 1/2 TBSP Chopped Parsley (optional)

  • *Basic Salad dressing (pear pure with citric acid - recipie to come)

  • Salt and or pepper to taste

Preparation

Step 1


Rice the Quinoa in a sieve.

Place the washed Quinoa in to a pot with the water and bring to the boil. Stir once then cover with a lid letting it simmer for about 20 mins (add more water if it starts to dry out in this time).



Step 2


Dice the leek and fry with a little oil untill it has just managed to brighten in colour (greens). Put in to a large bowl.



Step 3


Dice celery and spring onion and add to bowl.



Step 4


Once Quinoa is soft and cooked, add to the bowl with the other ingredients. Mix in the peas, beans and parsley. (the heat of the quinoa should defrost the peas and beans leaving them a nice green colour). Add seasonings to taste and basic salad dressing.



OPTIONS: can add chicken, mung beans, chopped cabbage, chopped carrots.
