*Holiday Rice Short bread

About the Recipe

This is a great recipe to help have something sweet and normal that does not upset the stomach. For myself I usually feel better after eating this type of cookie. Best used with a fine grain rice flour, - even so it does have a grainy texture about it.

Ingredients

  • 1 cup rice flour

  • 125 gms Nuttelex (original) butter

  • 1 TSP of Baking Powder

  • 1/3 cup sugar

  • 1/8 TSP of Pure Vanilla Essence

  • 1/2 TSP of Mixed Spice


Preparation

Step 1


Preheat oven to 150 deg C



Step 2


Combine all ingredients together in a bowl until the mixture is able to be kneaded. (or rolled in to a big ball with out falling apart). If the mixture is to moist, knead on a floured board. Set mixture aside to rest.


Step 3


Line a cookie tray.

Roll mixture on a floured board in to sausage like shapes to the diameter of the cookie that you are after. Cut in to 0.5 cm sections. Place circles on lined cookie tray. Bake for 45 min or until slightly coloured (if they are brown or gold they are over cooked - they should still be pale in colour).


Step 4


Once cooked, take out of oven and allow to cool. Place in air tight container.
