Ingredients

  • 350gm of chicken breast ( about 1 chicken breast)

  • 1 egg

  • 1/2 Cup of Potato Starch/flour

  • 50gm Salted corn chips (ie Aldi 's -'Sprinters Corn chips - Toasted)

  • 50gm of salted plain potato chips (crisps) (ie Safeways - 'Salted Chips')

  • 1 Tsp chives (dried or fresh)

  • small amount of Oil to fry (rice bran)

Preparation

Step 1


Cut the chicken in to tender sized (1-2 cm) strips



Step 2


Take the corn chips and potato chips and put them in to a resealable bag. Use a rolling pin to crush them in to crumbs.




Step 3


Take three bowls out in order to coat the chicken.


  1. In the first bowl, put 3/4 of the potato starch.

  2. In the second put the egg and beat it with a fork.

  3. In the third put the crumb mix



Step 4


Put a piece of chicken in the first bowl and coat with potato starch, then coat with the egg mix in the second bowl, and then finally coat with the crumb in the third bowl. Do this for each peice of chicken.


Step 5


Heat a fry pan with the oil and fry the chicken until it is almost just cooked then set aside (the chicken will cook for a little more making it tender and lower in amines). Wait 3-4 mins and cut one of the bigger pieces of chicken in half to check it is cooked.


If cooked, - it is ready to eat, if not cook chicken for a little longer.
